Easy Chicken Tacos

I love tacos, especially as an easy weeknight meal, but store bought seasoning is chock full of sodium, so I set out to make my own homemade version. Fresh cilantro and spices reduce the need for salt and make this an easy, delish meal!

INGREDIENTS:
1 1/2 pounds boneless, skinless breasts, cooked and shredded
1/3 cup water

Seasoning:
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons ground cumin
1 teaspoon smoked paprika
1 teaspoon chile powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
4-inch corn tortillas

Optional toppings:
Grape tomatoes, quartered
Red onion, finely diced
Fresh cilantro, chopped
Juice of a lime
Sliced Avocado

DIRECTIONS:

  1. Combine all ingredients for seasoning in a small bowl. In a skillet over medium-low heat, combine cooked, shredded chicken, water, and seasoning and let simmer for 10 minutes.
  2. Warm tortillas in microwave for 10-15 seconds and make tacos with desired toppings.
