RAISE YOUR HAND IF YOU LOVE CHOCOLATE FOR BREAKFAST
I am seriously NOT a traditional oatmeal person- I always hated the warm, mushy texture. But discovering overnight oats was a total gamechanger. I didn’t make these as overnight oats, because I hadn’t planned on waking up craving chocolate and carbs (silly me), so I cooked these and stuck them in the freezer for 30 minutes to get ’em nice and cold. BUT this recipe could easily be converted into overnight oats (throw everything in jar, stir it up, and refrigerate that *ish). However if you’re like me and lack the ability to plan ahead, here’s the 411:
3/4 c. old fashioned oats
1 medium ripe banana, mashed
3/4 c. almond milk
1 Tbsp unsweetened cocoa powder
1 Tbsp cacao nibs (or chocolate chips)
1 Tbsp melted peanut butter
- In a small saucepan, combine oats, mashed banana, almond, milk, and cocoa powder. Simmer until milk has absorbed into oats, about 4-6 minutes, stirring occasionally.
- Remove from heat and place in bowl. Top with cacao nibs, strawberries, and melted peanut butter. Enjoy!
